The excellent access of just a 1-minute walk from Susukino subway station is also one of its attractive points. There's also an ultimate bowl that allows you to enjoy both ikura (salmon roe) bowl and ramen at once, something you absolutely must eat when you come to Hokkaido. There are three flavor varieties - shio (salt), miso, and shoyu (soy sauce) - and three soup types ranging from those where you can taste the shrimp flavor straight to those blended with tonkotsu soup. For noodles, they offer thick noodles with a chewy texture that the sweet shrimp umami clings to, and thin noodles that enhance the shrimp soup's flavor and provide a smooth throat feel.
I have tried both the Shrimp Salt and Shrimp Miso. Both truly had an intense shrimp flavor, and the rich umami intertwined deliciously with the noodles.
The red tempura flakes made from fried shrimp-flavored red pickled ginger that tops every type also provides a nice accent.

Aji no Sanpei is known as the originator of Sapporo's miso ramen.
The founder was inspired by miso soup, which is indispensable to Japanese daily meals, and created a miso-flavored noodle dish, which became miso ramen.
Later, they developed yellow medium-thick curly noodles with Sapporo's Nishiyama Seimen. Currently, those curly noodles have become mainstream for Sapporo ramen, making this establishment a cornerstone of what defines Sapporo Ramen 2025.
Aji no Sanpei's Miso Ramen has a light, gentle flavor, and the bean sprouts and ground meat pair well together. I initially felt the taste was mild, but I was able to keep eating more and more.
Besides Miso Ramen, the menu also includes Shoyu Ramen and Shio Ramen, and Tekka Ramen using spicy miso is also a popular menu item.

True to its name as a specialty shop, they compete solely with miso ramen. Their masterpiece is the classic Miso Ramen. They create the soup by combining a clear soup base extracted from pork knuckle bones, back fat, chicken, and vegetables with three types of miso and vegetables. The flavorful yet light soup pairs excellently with the medium-thick noodles that have great texture.
The toppings include plenty of vegetables like cabbage and bean sprouts stir-fried with ground meat, plus bamboo shoots and julienned green onions. This is truly the royal road of miso ramen.
The Corn Butter Ramen, which deepens the richness even further, is also a popular menu item. I tried the corn butter ramen myself. The delicious flavor of the combined soybean and barley miso made waiting in line worthwhile.
