One of the specialties among the single-dish menu items is Tororo Teppanyaki. Tororo Teppanyaki is a dish where grated yam is made into a paste and grilled on an iron plate. There are two versions, Japanese-style flavor and one with cheese, and you can also order half-size portions with both types on one plate.

I ordered the one with cheese. The umami of the seafood like squid inside combined with the cheese created a rich, deep flavor that I thoroughly enjoyed.

Also, Braised beef tendon is another extremely popular menu item. The tenderly simmered Braised beef tendon with its sweet flavor pairs perfectly with sake.

For beer, they have beers from famous Japanese beer manufacturers such as Asahi Beer and Sapporo Beer. Beer and soda-mixed drinks pair well with Miyuki's Sashimi and fried foods, so you can enjoy drinking plenty.

Also, sake that pairs well with Kanazawa Oden is available in great variety and is very popular. What moved me with its deliciousness, as taught by a local person, was the drinking method of diluting sake with Oden's Dashi soup. The subtle saltiness of the Dashi soup is added to the sake, creating a very satisfying flavor.

- Daikon (Japanese radish)
Daikon is arguably the most iconic ingredient in Japanese Oden. Kanazawa's daikon absorbs much more moisture than regular daikon, so with each bite, Miyuki (Oden Izakaya)'s exquisite Dashi soup seeps out, allowing you to taste the rich umami flavor.

- Kurumafu
Kurumafu is made by kneading wheat flour, shaping it into a donut form, and baking it. It's a Kanazawa specialty and an Oden ingredient unique to Kanazawa Oden. I saw it for the first time in Kanazawa, and I was particularly surprised by how large Miyuki's Kurumafu was.

The chewy texture was delicious, and it absorbed plenty of soup with the flavor soaking in deeply.

In addition to these, there are other ingredients unique to Kanazawa Oden, such as Akamaki, a fish cake commonly eaten in Kanazawa, and Japanese babylon, which is frequently caught in Kanazawa. Japanese babylon has an addictively delicious crunchy texture, so be sure to try it.

I visited in winter, so it was the season when Sweet shrimp was particularly fresh and delicious. The Sweet shrimp sashimi, a Kanazawa specialty, had a truly succulent texture and an exquisite strong sweetness. The yellowtail Sashimi was also glistening and paired wonderfully with dry sake.

Additionally, there's an abundance of shellfish Sashimi unique to Kanazawa, such as turban shell and Japanese babylon.

Gas shrimp, along with sweet shrimp, are abundantly caught in the waters near Kanazawa, so they have been beloved by the people of Kanazawa since ancient times.

Miyuki's Deep fried gas shrimp has an exquisite taste with its crispy texture and the robust sweetness that spreads in your mouth the moment you bite into it. Adding lemon for some acidity makes it perfect with beer, and you could eat it endlessly.

I had heard about the reputation of Miyuki Special Fried Fish Paste beforehand, so I was very much looking forward to it. When I actually saw it, what struck me was its beautiful and charming white, round appearance.

The fish paste that's been kneaded has a fluffy texture when you bite into it, and it's piping hot. The aroma of the chopped perilla leaves inside was refreshing. When you dip it in Ponzu sauce, the acidity is added, giving it an even more refreshing taste.

At Miyuki (Oden Izakaya), you can enjoy an abundance of exquisite sake made in Kanazawa. When I visited, nine varieties of famous Kanazawa sake brands were available to order. When I asked the friendly staff, they told me the most popular brand was the fruity-tasting "Tedorigawa Arabashiri."

When ordering sake, many brands allow you to choose between hot sake and Chilled sake. In the cold winter, warm yourself from the core with warm Oden and hot sake. In summer, try enjoying fresh Sashimi together with Chilled Sake.

Also, what I personally recommend is Miyuki's original draft stored sake. It has a fresh taste that lets you feel it's just been pressed, and its slightly dry character pairs perfectly with Miyuki's elegant Oden.

Itaru Mainstore is a popular Izakaya restaurant located in Katamachi. An Izakaya is a Japanese-style pub where you can enjoy drinks and food, and at Itaru, you can savor dishes made with delicious Kanazawa seafood alongside your drinks.

At Itaru, the seasonal Sashimi platter served in a bucket is a popular menu item. The Winter yellowtail Sashimi I had was surprisingly thick, with a soft texture that melted in my mouth—it was absolutely wonderful.

You should also try Kanazawa's specialty Nodoguro (blackthroat seaperch) grilled with salt or simmered. Since this is an extremely popular restaurant, it's recommended to make a reservation if you plan to include it in your bar hopping. Shokusaiizakaya Enishi is an Izakaya restaurant with a charming hidden gem atmosphere. It's run by a chef who trained at the famous long-established restaurant "TSUBAJIN" in Kanazawa, and it's a place where you can enjoy authentic course meals together with drinks.

Dinner at Shokusaiizakaya Enishi is by reservation only, and the chef's omakase (chef's choice) course is provided. A chef with solid skills creates exquisite dishes that are both meticulous and unique, using seasonal ingredients from Kanazawa.

For drinks, you can freely choose the type and quantity from the restaurant's lineup of over 80 varieties. There are truly many types including cocktails, beer, and shochu, and I was amazed to find some very premium sake brands as well.
